Key Findings in the Food & Beverage Hydrocolloids Study:

Plant & Seed Gums & Extracts to Remain Largest Food & Beverage Hydrocolloid Type

Plant and seed gums and extracts are forecast to account for nearly three-quarters of total demand, supported by their widespread use in food and beverage application, in particular cellulosics. The fastest growth will be seen for guar gum, supported by healthy growth in average prices arising from feedstock restrictions. Increasing production capacity and manufacturers’ efforts to tighten access to feedstocks will slow pectin price growth, restraining further gains in demand.

Growth in Seaweed Extracts Demand Impacted by Limited Feedstock Supplies, Growing Demand

Growth for seaweed extracts is forecast to post above-average growth, with gains driven by rising prices for agar -- and to a lesser extent carrageenan and alginates -- resulting from restrictions in feedstock supplies. Growth in demand for carrageenan will slow, as concerns regarding the potential health impact of its consumption will restrain growth. The development of novel applications will help support moderate growth for alginates.

Study Coverage

This industry study presents historical demand data (2006, 2011, and 2016) and forecasts (2021) by product class, including plant and seed gums and extracts (cellulosics, pectin, guar gum, locust bean gum, gum arabic), seaweed extracts (carrageenan, alginates, agar), and xanthan gum. The study also evaluates company market share and competitive analysis on industry competitors including CP Kelco, DuPont, Dow, FMC, and Ashland.

US demand for food and beverage hydrocolloids will increase nearly four percent per year to $1.3 billion in 2021. Fortified products and free-from products will post strong gains. Plant and seed gums and extracts are expected to remain the largest product segment, while dairy products will remain the largest application.

This Freedonia industry study presents historical demand data (2006, 2011, 2016) plus forecasts for 2021 by product class, including plant and seed gums and exudates (cellulosics, pectin, guar gum, locust bean gum, gum arabic), seaweed extracts (carrageenan, alginates, agar), and xanthan gum. The study also evaluates company market share and offers competitive analysis on industry competitors including CP Kelco, DuPont, Dow, FMC, and Ashland.
